Everything below is made here on the farm. Product names are kept in Italian — they are the names on the labels and at the counter, so you can point at what you want. We do not ship: you buy at the farm shop, open every day, or from the vending machines, open 24/7.

Cow's-milk mozzarella, stretched the same morning. Sweet and springy, sold in its own brine.

Our house semi-hard cheese with a natural rind, aged 30 days in the cellar.

Caciocavallo

Stretched curd, tied by hand and hung to age. Mild when young, sharper with the months.

Giuncata

Sweet curd drained in a rush basket, with no salt at all. Extremely delicate — eat it with a spoon.

Lombardy's classic blue, heavily veined. Creamy and assertive.

Hard, grainy, long-aged. Grated over pasta, or in shards with a drizzle of honey.

Milk from this morning, eggs, cured meats, rice from our own paddies, stone-ground flour and lentils from our fields.

Latte fresco

Milked each morning and bottled the same day. Raw from the vending machine, or pasteurised in a bottle.

Uova fresche

From barn-raised hens. Collected daily, sturdy shells and a deep yolk.

Salame nostrano

House salami, made the traditional way and aged in the cellar. Medium grain, full flavour.

Riso Carnaroli

Grown in our own paddies. A large grain that holds its bite in a risotto.

Riso venere

Wholegrain black rice, nutty and fragrant. Holds its bite, hot or in a salad.

Farina di tipo 0

White flour, stone-ground from wheat grown in our fields. Rich in wheat germ.

Farina di polenta

Cornmeal, stone-ground from our own maize. Medium grain, for a thick, full-flavoured polenta.

Lenticchie

Small, full-flavoured lentils, harvested and sorted here. No long soak needed, and quick to cook.

Sweet things

From the spoon
to the jar.

Yoghurt, puddings and cannoli made here with our milk. And seasonal fruit, cooked slowly and put into jars.

Yogurt

Made with our whole milk, slowly fermented. Seven flavours, from plain to coffee.

Strained yoghurt: thicker and denser, creamy on the spoon. Plain or strawberry.

Budini

Puddings made in the dairy with farm milk and cream. Eat them cold, with a spoon.

A crisp shell and fresh ricotta cream, filled on the day you buy them.

Marmellate

Jams: seasonal fruit cooked slowly with little sugar. The flavours change with the harvest.
