Everything below is made here on the farm. Product names are kept in Italian — they are the names on the labels and at the counter, so you can point at what you want. We do not ship: you buy at the farm shop, open every day, or from the vending machines, open 24/7.
Soft curd,
milk from today.
Hand-stretched pasta filata and soft cheeses, best eaten within a few days of being made.
Fiordilatte
Cow's-milk mozzarella, stretched the same morning. Sweet and springy, sold in its own brine.
Nodini
Little knots of mozzarella, tied by hand one at a time. The shape children always go for.
Burrata classica
A hand-closed mozzarella pouch filled with stracciatella and cream. Open it at the table.
Burrata per golosi
The same burrata, with mild gorgonzola folded into the heart. For a sharper contrast.
Stracciatella
The heart of the burrata, sold on its own: strands of mozzarella pulled by hand and bound with cream.
Cremaccazzola
Our spreadable fresh-milk cheese: thick, mild, nothing added. Born in the dairy, and named after the house.
Crescenza fresca
Very fresh and soft, close to a young stracchino. Eat within three days of production.
Robiola
Soft lactic curd, creamy enough to eat with a spoon. Plain, with herbs or with black pepper.
Primosale
Lightly salted, firm and sweet — the "first salting" of a young cheese. Plain or rolled in herbs from the field.
Ricotta di fattoria
Made from the whey of the same day's milk. Produced every other day.
Time
and a cool cellar.
Matured in our own cellars, with a fuller flavour. For the table and for grating.
Morbidella
Our house semi-hard cheese with a natural rind, aged 30 days in the cellar.
Caciocavallo
Stretched curd, tied by hand and hung to age. Mild when young, sharper with the months.
Giuncata
Sweet curd drained in a rush basket, with no salt at all. Extremely delicate — eat it with a spoon.
Zafferano e pepe
Semi-hard cheese flavoured during production: the bright colour of saffron, the warmth of black pepper.
Gorgonzola DOP
Lombardy's classic blue, heavily veined. Creamy and assertive.
Taleggio DOP
Washed rind and a soft paste that melts in the mouth. Strong on the nose, surprisingly sweet on the palate.
Scamorza
Stretched curd, tied and left to dry for a few days. Excellent in a pan or on a pizza.
Latteria
The everyday cheese: semi-hard, sweet and clean. One for the whole family.
Grana padano DOP
Hard, grainy, long-aged. Grated over pasta, or in shards with a drizzle of honey.
Beyond
the cheese counter.
Milk from this morning, eggs, cured meats, rice from our own paddies, stone-ground flour and lentils from our fields.
Latte fresco
Milked each morning and bottled the same day. Raw from the vending machine, or pasteurised in a bottle.
Uova fresche
From barn-raised hens. Collected daily, sturdy shells and a deep yolk.
Salame nostrano
House salami, made the traditional way and aged in the cellar. Medium grain, full flavour.
Riso Carnaroli
Grown in our own paddies. A large grain that holds its bite in a risotto.
Riso venere
Wholegrain black rice, nutty and fragrant. Holds its bite, hot or in a salad.
Farina di tipo 0
White flour, stone-ground from wheat grown in our fields. Rich in wheat germ.
Farina di polenta
Cornmeal, stone-ground from our own maize. Medium grain, for a thick, full-flavoured polenta.
Lenticchie
Small, full-flavoured lentils, harvested and sorted here. No long soak needed, and quick to cook.
From the spoon
to the jar.
Yoghurt, puddings and cannoli made here with our milk. And seasonal fruit, cooked slowly and put into jars.
Yogurt
Made with our whole milk, slowly fermented. Seven flavours, from plain to coffee.
Yogurt greco
Strained yoghurt: thicker and denser, creamy on the spoon. Plain or strawberry.
Budini
Puddings made in the dairy with farm milk and cream. Eat them cold, with a spoon.
Cannoli della fattoria
A crisp shell and fresh ricotta cream, filled on the day you buy them.
Marmellate
Jams: seasonal fruit cooked slowly with little sugar. The flavours change with the harvest.
Compostine
Fruit compotes and savoury sauces: fig and balsamic, pear and cinnamon, apple and pepper, red onion. The right match for an aged cheese.
Miele
Honey from a beekeeper nearby, chosen by us — the one item here we do not make ourselves. Cold-extracted, untreated.
